Wild American Shrimp – Shrimp with Orzo, Spinach and Pineapple Recipe

3 tablespoons olive oil
1 leek, cleaned and julienned
1/4 pound spinach
1 red pepper, roasted, stemmed, peeled and julienned
1/2 pound orzo pasta, cooked
16 medium Wild American Shrimp®, peeled and cooked
1 cup Pineapple Basil Vinaigrette (recipe follows)
Salt to taste
Cilantro, for garnish
1/2 cup roasted peanuts, for garnish

Shrimp with orzo


In a medium sauté pan over medium heat, cook leeks in olive oil for 1 minute. Set aside. Toss all ingredients together with 1 cup of Pineapple Basil Vinaigrette, divide on 4 plates and garnish with cilantro sprigs and roasted peanuts. Makes 4 to 6 servings.

Pineapple Basil Vinaigrette


1/4 onion, julienned
1/2 cup rice vinegar
1 cup pineapple, diced
1/4 cup fresh basil
1/2 tablespoon lemon juice
1/4 teaspoon chili flakes
1/2 tablespoon Texas honey
1/4 cup olive oil
Salt to taste


Combine all ingredients in a blender and puree until smooth. Strain.
